Canned Rabbit

I need to know how long you let the filled jars in the canner, and do I cook the rabbits before I put them in the jars.

No need to cook the rabbit first. Stuff the jars full and put in the pressure cooker for about 70 minutes at 10lbs pressure.

Get a Ball or Kerr canning book from your local farm/feed/grocery store.
Just following the directions the same for any meat.

You dont know what your missing! I can rabbit and deer every year. You cant beat a big batch of rabbit and noodles or deer and noodles!

Thanks for the help I had some last year, at a wild game dinner. I couldn't get enough of it.

sorry for the stupid question but, do you debone the rabbit first or leave em in?

hey cat fish ..
what are you doing killing that many rabbits you have to can them ..save some bunnies for me to run some time...
a bad day hunting is better than a good day at work.

I bet if you smoked that rabbit meat first then canned it, it would be really good. If you did it like you would fish not smoked dry but smoked till tacky it would be awesome I bet

Doesnt make any difference, you can do it either way.

If you can rabbit it comes out very tender. I usually put a clove of garlic and some onion along with a dash of seasoning salt. I always debone my rabbits.

Hi Dave. This year I have'nt shot to many I only shot 10 so far. Boy this has been a great year for a lot of rabbits around here. I got permisson to run on some farms closer to Pittsburgh. They are just over loaded with rabbits down there. When work slows down I'll be hunting a lot more.
