About Canning....
Have you all notice that it takes the rabbit taste/smell away? Also, do you soak or chill your meat before hand? And, have you ever canned without the bones, does it make a difference?

I know when we can the venison we usually add a toe or two of garlic or some onion to the jar as we're packing it with the meat.You could probably add any spice that you enjoy the flavor of but I would start out sparingly with it as the meat absorbs what ever you add for the canning process. As was said above , canning the deer takes all the gameiness out of the meat and you can't tell it from beef. We do the deer at 15 lbs. presure for 45 min. in the presure cooker. If you use the old boiling water (cold packing) method , it takes 4 hours to do the same thing. But if you don't have a presure cooker , that will work just fine.Either way you just have to be sure that all your jars seal as they cool. If you get one once in a while that doesn't seal, you just refrigerate it and eat it up soon as it will spoil in the jar if not sealed. CHH
I used to can trout the same way except before I canned it I smoked it till it was tacky not fully smoked otherwords then I would can it. That really cooked the smoked flavor in when I canned it with the preasure cooker. In the fish it disolved the bones so there was no bones at all by time it got done canning it.
Only thing different is I used pint jars.
But I bet Rabbit would be awful tastey this way too.

I roll rabbit in flour, and do a quick fry, just enough to brown. Then get a couple packs of brown gravy mix, and double the water it calls for, put in crock pot, add rabbit, and cook overnight. If you want to get fancy, add some mushrooms, and diced onion.

I'm considering making a rabbit stew with all the veggies and canning it.... Has anyone ever tried that?

We use a regular canner not a pressure canner,we boil them 4 hrs. The pieces come out whole if you are careful.Stony_Branch_Kennels wrote:Tommyg,

Rabbit recipe
I am like you always looking for a good rabbit recipe. I tried one the other day that is all over the internet. White Chile , but instead of chicken i used rabbit. It is really good !
