cooking rabbits
Hey, how about some rabbit recipes on cooking rabbits.I flour and fry with onion until browned real well then add a little water,cover and cook a couple of hours.I keep adding water and the flour thickens it into a nice gravy .Over mashed potatoes its a meal fit for a king,always the meal night before dear season at camp everyone loves it. I like to make Cajun Salsa Picante (Red Sauce) out of a nice swamper. I debone and chunk it up, then flour and brown in butter.
Remove the meat and add flour and butter in equal portions. Heat on med/high while stirring for about 20 min., until it's about the color of a brown brick.
Add chopped onions, peppers (bell and jalapeno for me) and sweat them for a few minutes, adding chopped garlic towards the end.
Add an 8 oz. can tomato sauce and a 15 oz can of chopped tomatoes (or crushed, rotel, etc.- whatever you like) and a little water.
Salt/pepper to taste, add about 1/2 tablespoon of cajun seasoning.
Add meat back in and simmer on low for about an hour.
Serve over white rice.

I love it in a gumbo with a little squirrel and fresh smoked sausage. Maybe some potato salad on the side. Oh and sweet tea! Man I'm hungry

I like to debone and cut it into bite size pieces, roll in flour, salt, pepper, and garlic salt. Then deep fry until it is golden brown, I then put it in a bowl of chipolte sauce
and shake the meat around, then I put it in a glass bowl in the oven just to bake the chipolte sauce
in. Then with a little fryed potatos and a nice cold beverage your all set. I know its alot of work but its worth it in the end.

A favorite for me and the kids is just plain old fried rabbit. It took me quite a few tries to get it right but if you do it nice and slow the meat stays juicy and tender. Fry it too fast and you might as well eat a piece of leather.
Joeyman's recipe where you roll it in flour, brown it in a pan then cover it with gravy and bake in the oven is pretty awesome too. It keeps from getting too dry when you do it that way too............plus it goes great with mashed potatoes.
Rabbit stew........oh boy now that's another good one too! I'll have to look up the recipe I used last year for the stew. I only did it just once at the end of the season but my kids gobbled it all up. I barely had enough left to let my dad try some so I could see what he thought of it.

quarter the rabbit (1 rabbit per person) , peel potatoes cut in 1/4's, add Mushroom soup, 1 clove of fresh Garlic , Mix soup and Garlic together with a touch of milk, pour half in a slow cooker add rabbit and potatoes, pour the other half of soup w/garlic on top, Put on med for 9-10 hrs, when done Mash potatoes and use the soup as the gravy, It is a good dish

Rabbit and noodles!
I always cut the legs off and pulled the loins (backstrap) from each rabbit. Pack jars full of legs and backstrap leaving about a half inch of space from top of jar. Then follow directions for canning meat as far as pressure, time and amount of canning salt.
When you get ready to make noodles just open jars, drain and seperate bones from meat. The meat will just fall off the bone. Add to noodles and eat!

debone rabbit.add 1 can cream of mushroom,and then put tator tots on top.Bake for about 2hrs.I got this recipe off another site.It is really good.I have been changing it around a little,and have had good results.cheese,seasonings..etc.......darn! freezers empty!

2 rabbits quartered
roll in egg and spicy cracker crumbs.
Brown in bacon greece
put in casserole dish
make milk gravy in fry pan and pour over rabbit
place bacon on top
cook on 350 for a hour

De-bone rabbit then grind it with 20 to 25% pork fat add LEM breakfast sausage seasonings according to directions and use like any regular store bought kind.
