I usually soak em for a couple days in brine then wrap with thick sliced bacon then smoke for two or two and a half hours on 210 degrees. Be careful cause they can dry out pretty quick. good luck

Re: SMOKED RABBIT ?
I have found that with most wild game it is better to smoke at a low temp (less than 200 degrees) for an hour or two. Then put in a oven safe dish and cover with foil and finish in oven.

I do what Aaron says, smoke on very low to get a good smoke flavor, then finish off in a cast iron dutch oven with cream of mushroom or celery soup. Makes good easy gravy and rabbit will fall off the bone!!

Re: SMOKED RABBIT ?
Well I had a great turnout. I soaked my rabbit in zesty italian dressing, beer, and worchester sauce over night. Then took it out sprinkled meat tenderizer seasoning and chicken and rib rub on then wrapped in bacon. I smoked the meat for about 2 1/2 hours over charcoal and hickory chips. I strongly suggest anyone to try it at least once. it takes alittle time but worth everybit.

Pete's and my dogs smoked a few the other day. Somebody forgot to tell them that the air was dry. I think they achieved "Smoke Johnson" status at least 3 times.
