We have a tannery right here in Hartford WI. Just Google W.B. Place tannery, and all the info. is there. I have had many hides tanned there I strongly recommend them. They also will make your leather apparel. I have a messed up hand and they make my gloves for me with my hides.

4-Full Choke
5-Extra Full Choke

These are in order from widest pattern to tightest pattern, so improved cylinder would spread the most of the three you listed.
